Lowline and lowline cross cattle are making their mark in carcase completions. Winning Royal Melbourne, Royal Brisbane and National Beef proving  their quality in all aspects of beef production.

The trends that seem to be emerging from these carcase competitions, is that not only are lowlines doing very overall, they seem to nearly always be winning or placing in the eating quality sections.  Isn't that what we all want?

You might not get as much beef from Lowlines compared to other breeds but Lowlines are proving they have a higher yield - meaning they produce a higher percentage of beef  because they have a lot less bone which is just adds to the weight of other steers. When we process an animal we pay pre kilo on the carcase weight including all the bones.

At most Royal shows all the bulls are scanned for fat and for their EMA which is eye muscle area or the area of their eye fillet.  The eye muscle is one of the largest muscles of a carcass.  It lies on each side of the backbone and runs the full length of the back.  The area of the eye muscle has a strong correlation to the total amount of muscle in a carcass.  Above is a picture of Lilliput Lord Alkaloid  who was Senior Champion Bull at Royal Melbourne Show 2007 & 2008.  In 2007 he weighed  455kg and had an EMA of 91sq cm whilst the senior Champion Angus bull weighed 1192kg which is nearly three times Alkaloid's weight but his EMA was only 134sq cm. When we translate these EMA's to per 100kg of body weight, Alkaloid's was 20sq cms per 100kg nearly double that of the Angus which was 11.24sq cms per 100kg. That is a lot more eye fillet per 100kg.

At lilliput we sell our steers to customers that want to finish a steer for their own freezer as well to other breeders who are on selling the meat.

We are also selling lowline meat in bulk packs of a half or quarter of a steer cut up to our customers specifications.

The meat from you was of exceptional quality, from the sausages through to the eye fillet. The steak was of restaurant quality and the ‘lesser’ cuts better than I buy at the butcher. I look forward to the next steer being of the same quality as this one.
